When it comes to your kidneys, it's easy to think that salt is the harmful white crystal. This is because we are constantly being told that eating too much salt is stressful on our kidney-shaped organs. However, this does not appear to be true. Indeed, the evidence in the literature shows that overconsuming sugar drives chronic kidney disease, whereas not consuming enough salt can actually cause kidney issues. In fact, one study concluded kidney function actually deteriorates with a low-salt diet due to impaired blood flow to the kidneys.
Herbert had softer stool for all the days of the challenge, and on seven out of the 14 days she went to the bathroom more than once. "This is not normal for me, but everything was 'smoother'. I started using Xylitol [a sweetener] towards the end, but it upset my stomach. This was a side-effect that made it more difficult to sustain the challenge."  
The protective effect of antioxidants continues to be studied around the world. For instance, men who eat plenty of the antioxidant lycopene (found in tomatoes) may be less likely than other men to develop prostate cancer. Lutein, found in spinach and corn, has been linked to a lower incidence of eye lens degeneration and associated blindness in the elderly. Flavonoids, such as the tea catechins found in green tea, are believed to contribute to the low rates of heart disease in Japan.
But before you run out and stock up on chocolate bars, it’s important to note that you’d have to eat about seven bars a day to ingest the 138 milligrams of epicatechin given to the study participants. A healthy portion of dark chocolate is about 1.5 ounces. However, the results do suggest an important link between the compound and memory-loss. Certain supplements contain healthy doses of epicatechin, and the antioxidant can also be found naturally in apples, blackberries, and green tea. 

Most dark chocolates are produced on the same processing line as chocolate products containing milk. Which is why most of them have advisory labels. A recent testing of 88 bars concluded that “a high proportion of dark chocolate products contain milk at concentrations associated with allergic reactions in sensitive individuals” (see the 2017 study)

Obviously, not all chocolate is created equal. To get the most benefits associated with dark chocolate, you want to steer clear of any of the candy bar varieties (even if they are “gluten-free” or “Paleo”) and be sure to choose a bar that contains at least a 75 percent cacao content. This will ensure there are minimal added sugars, so you get the bittersweet goodness without the damaging effects of sugar.
Another side effect of inflammation: It may make your skin age faster. Sugar attaches to proteins in your bloodstream and creates harmful molecules called “AGEs,” or advanced glycation end products. These molecules do exactly what they sound like they do: age your skin. They have been shown to damage collagen and elastin in your skin -- protein fibers that keep your skin firm and youthful. With this study we present a comprehensive survey of the total antioxidant capacity in foods. Earlier small-scale studies from other laboratories have included from a few up to a few hundred samples [20-22,29-31], and in 2007 the U.S. Department of Agriculture presented the Oxygen Radical Absorbance Capacity (ORAC) of Selected Foods report including 277 food samples [23]. These studies have been done using different antioxidant assays for measuring antioxidant capacity making it difficult to compare whole lists of foods, products and product categories. Still, a food that has a high total antioxidant capacity using one antioxidant assay will most likely also be high using another assay [20-22]. Consequently, the exact value will be different but the ranking of the products will be mainly the same whichever assay is used. In the present extensive study, the same validated method has been used on all samples, resulting in comparable measures, thus enabling us to present a complete picture of the relative antioxidant potential of the samples.
The cocoa butter found in dark chocolate contains equal amounts of oleic acid (a heart-healthy monounsaturated fat also found in olive oil), stearic and palmitic acids. It’s true that stearic and palmitic acids are forms of saturated fat, but research shows that stearic acid appears to have a neutral effect on cholesterol, which means it doesn’t raise it or lower it. The palmitic acid in dark chocolate can increase cholesterol levels, but thankfully it only makes up about a small portion of the fat in dark chocolate — plus dark chocolate has a lot of great plant nutrients that make up for palmitic acid.
Initial studies have been carried out to examine the association between intake of antioxidant rich foods and their health effects [67,70]. Some of these studies describe a beneficial effect on oxidative stress related chronic diseases, e.g. from intake of nuts [49,69], pomegranates [71-73], tomatoes [6], coffee [74], tea [54,75,76], red wine [77-79] and cocoa [56]. The highly reactive and bioactive phytochemical antioxidants are postulated to in part explain the protective effect of plant foods. An optimal mixture of different antioxidants with complementary mechanisms of action and different redox potentials is postulated to work in synergistic interactions. Still, it is not likely that all antioxidant-rich foods are good sources and that all antioxidants provided in the diet are bioactive. Bioavailability differs greatly from one phytochemical to another [26,27,80], so the most antioxidant rich foods in our diet are not necessarily those leading to the highest concentrations of active metabolites in target tissues. The antioxidants obtained from foods include many different molecular compounds and families with different chemical and biological properties that may affect absorption, transport and excretion, cellular uptake and metabolism, and eventually their effects on oxidative stress in various cellular compartments [24]. Biochemically active phytochemicals found in plant-based foods also have many powerful biological properties which are not necessarily correlated with their antioxidant capacity, including acting as inducers of antioxidant defense mechanisms in vivo or as gene expression modulators. Thus a food low in antioxidant content may have beneficial health effects due to other food components or phytochemicals executing bioactivity through other mechanisms.
They tested this by giving subjects different cough medicines. One group received common cough medicine with codeine; the second group received a solution of theobromine and the third group was placebo. They were exposed to capsaicin (the chemical responsible for making chili peppers spicy.) Their intention was to see how much capsaicin was required to induce five coughs. Having one's lungs exposed to capsaicin will usually cause even the most hardened chili-head to break into a coughing fit.

Let’s not forget about our little ones! When New York City public schools reduced the amount of sugar in their lunches and breakfasts, their academic ranking increased 15.7% (previously, the greatest improvement ever seen had been 1.7%).11 The study also eliminated artificial colors, synthetic flavoring, and two preservatives, showing the importance of natural ingredients for children.


No, it’s not your imagination; some research supports the idea that chocolate really can boost your mood. It’s the fatty acids that do the trick, and dark chocolate contains two saturated fatty acids — palmitic and stearic acids — in addition to its health-boosting flavonoids. More research needs to be done, DuBost says, but studies have found that chocolate in particular can make you feel happier and improve your mood. The theory is that chocolate stimulates the neural activity in the regions of the brain associated with pleasure and reward, she says.

As demonstrated in the present study, the variation in the antioxidant values of otherwise comparable products is large. Like the content of any food component, antioxidant values will differ for a wide array of reasons, such as growing conditions, seasonal changes and genetically different cultivars [46,58], storage conditions [59-61] and differences in manufacturing procedures and processing [62-64]. Differences in unprocessed and processed plant food samples are also seen in our study where processed berry products like jam and syrup have approximately half the antioxidant capacity of fresh berries. On the other hand, processing may also enhance a foods potential as a good antioxidant source by increasing the amount of antioxidants released from the food matrix which otherwise would be less or not at all available for absorption [65]. Processing of tomato is one such example where lycopene from heat-processed tomato sauce is more bioavailable than unprocessed tomato [66]. The large variations in antioxidant capacity observed in the present study emphasize the importance of using a comprehensive antioxidant database combined with a detailed system for food registration in clinical and epidemiological studies.
Just like many of us love to eat chocolate, so does the good bacteria living in your gut, according to a study presented to the American Chemical Society. The nutrients found in chocolate, such as polyphenols, antioxidants, and fiber, aren’t easily digestible, but when good bacteria feeds on the fiber, compounds that are smaller, easily absorbable, and non-inflammatory are released. As a result, inflammation in cardiovascular tissue can be reduced.
Lung, prostate, breast, ovarian, bladder, oral and skin cancers have been demonstrated to be suppressed by retinoic acid. (9) Another study collected numerous references demonstrating the findings of retinoic acid in protection against melanoma, hepatoma, lung cancer, breast cancer and prostate cancer. However, there’s evidence indicating that the benefits of chemicals like retinoic acid are safest when obtained from food naturally, rather than supplements.
The action of these antioxidant substances is complex and poorly understood. Each substance has a specific action, but it is in combination that antioxidants appear most powerful. Attempts to mimic their effects with supplements have been largely unsuccessful; it seems nature remains smarter than mankind when it comes to antioxidants. Part of the reason for this seems to be bioavailability: Your body “knows” how to use natural antioxidants; it does not know how to use the lab-made versions.
"She can have fresh fruit as the amount of fructose/glucose in fruit is not high. It's also bound in a food matrix, and with the fibre it contains it doesn't get absorbed like white granulated sugar," Catsicas said. "It does not cause high blood sugar and a corresponding insulin response. The portion size is important, though: only 100 to 150g fruit at a time and, as mentioned, only 1–2 portions per day." 
Small-scale studies have indicated for quite some time that regular intake of cocoa can have a positive effect in fighting cardiovascular disease. A more recent study on cocoa's cardiovascular benefits, done in 2006, proved this among a larger study group of 470 men, all tested while consuming different daily doses of cocoa. The conclusions were that cocoa does indeed lower the chances and significance of cardiovascular disease.
Plants are humanity's greatest ally in the fight against climate change. Plants soak up carbon dioxide and turn it into leaves and branches. The more trees humans plant, the less heat-trapping carbon pollution in the air. Unfortunately, plants require a lot of water and land, so much that humans might need a new to find a new ally to help draw down all that carbon.
